Hi fellows,
Well, next weekend will be my 2nd hog hunt. A few friends, my brother-in-law, and I are going to Boar Creek Ranch in NE Texas. If our experience last time is any indication, we should be in for a great weekend! Hope to keep up my 100% kill ratio! 
Even if we strike out on hogs, the food, relaxation, & camaraderie will be worth the trip! I'll let you know how it goes!

I can't wait to hear how it goes. This time of year gets slow on the board. For the most part, it is too hot to hunt. You shoot any hogs, get their guts out asap, and get the meat on ice. If you can't butcher it quickly, pack the body cavity with ice until you can get it cut up.

OK!
The weekend hunt was very productive, although mostly pretty small hogs.
I got one, my neighbor (Keith) got two, and my brother-in-law (Loyd) got three! One of Keith's was a 165 lb boar, and one of Loyd's was 100. The rest were pretty small, with mine at 70 lbs. The smallest was Keith's second pig, at about 30 lbs. Loyd's two smaller ones were in the 50-65 range.
Not bad - six pigs for three guys on a weekend. The pits will be a-smokin' this weekend!

| Actually, I prefer the sows as table fare. I have seen the boars from Sabine County, have no detectable taint to the meat, while others can be tasted. Just south of there, in Newton county, the boars down there would be so rank, you couldn't eat them unless your sense of taste and smell had gone south.

Well, I haven't eaten any of my little boar yet, but my sis broiled the backstrap off of Loyd's 100-lb boar and served it up to their family for Father's Day. They said it was great, with no gamey taste at all. She cooked it with apple cider - not sure if it was marinated, or basted with it, or what. I'll have to get more details...
In any case, it was encouraging news! We're going to BBQ a quarter of my hog this weekend. I'll provide a full report.

I think it has to do with how much Eurasian Boar (Russian) blood is in the hog. The hogs where we are hunting, have a strong Eurasian influence, and many of the boars don't have any taint at all. The smaller the hog is, the less the chance. I have not run across a sow that had any taint to it. Let us know!
ps. If you are smoking the meat, that normally will hide any small taint.

Well, this weekend we ended up not barbequeing, but my wife baked 1/4 of my little 70 lb boar. Nothing fancy, just seasoned with salt/pepper/spices and baked for a while. It was GREAT!
As expected, it was a little leaner & dryer than store-bought pork, but what a flavor! No trace of gamey taste. We had some neighbors over for a little birthday party for their son, and everybody agreed the pork was great. We also had some sausage made from Keith's 165-lb boar. It was great too! He had one batch made up with jalapenos, and another with green onions. Both were delicious!
Looking forward to the next hunt, but it may have to wait for cooler weather!

Next time, bake it in a "browning bag" ( I think I totally mispelled that ). Anyway, the bags come with instructions, just do what they say, and add the vegetables and spices, as you like. It will keep the moisture in.
