O.K. here is my recipe; like I said most people have thier own.

You need:
  • 1 yellow sweet onion diced
  • 1 bell pepper diced
  • a few stalks of celery
  • about 4 cups of stock "match the stock to the meat" you can use water if you want, but the stock is just better for a richer flavor. Do not use broth; it's way to salty after it reduced.
  • a few table spoons of oil or lard
  • 1 big old  steak, or stew meat, or whatever you want to use
  • 1 can of diced tomatos, fresh works good too. "if you don't have any, then just use some tomato paste

Put the oil in your pot and get it smokin hot, then add your meat and brown the crap out of it!! Don't be afraid to burn it! Most people are afraid to really brown the meat; so don't be a sissy!

When the meat is good and brown, remove it from the pot and throw in the diced onion, bell pepper, and celery. Don't be a sissy about this either; they need to be browned "not sweated slowly,"but really browned good. Keep the pot hot, the onions will cool it down quite a bit when they hit the pot, so don't turn down the heat before you put them in because your scared you will burn them. Keep them stirring and they won't burn; they will just brown really good.

When the onions are good and brown throw in the tomatos and keep stiring; they will smell like they are going to burn, but no worry. When the tomatos are browned up good, then add the stock and put the meat back in the pot with your favorite spice and let cook slow for a good couple hours and your ready to eat. Don't forget to make the rice.
