I'm off today and made a nice pepper roast for the family. I love pepper steak over rice, but I like the roast too. Just another dish from Louisiana. The peppers you see are bell, the peppers you don't see were bannana, diced and mixed with the other bell peppers and onion that made the gravy, before it was slow roasted. It has a very nice pepper flavor without the heat, makes a nice roast. Serve with Garlic cheese toast and rice!!!

They five cows running wild at Bond Swamp. I'm not kidding. Saw them last trip. They are pretty good size, been loose there about 3 -4 years now. Game warden wont give a straight answer about shooting them, i asked. Not real sure how river cane fed beef would taste!!:bigwink
