  Nutoy, try some pecan wood or sugar maple if you can get some. Sugar maple lends a hint of sweetness to the meat and pecan gives it a slight nutty flavor. I use cherry,mesquite and apple sometimes, and of course hickory. I like to try different woods with different meats to see what my family and i like best.

   You, me and boarmaster should get together and make a cook book on wild game and domestic meats and foods. Maybe even give food network a shot for our own show. I cook about 50% of the time at home and 100% of the time at the fire station. My wife and i own a catering company and what can i say, i love good food.

   I make up my own rubs for different meats, beef, chicken and pork, and even veggies. Try some olive oil, salt, pepper and fresh lemon juice on aspargrass, grill for a few minutes with your favorite wood and serve hot. :biggrin Leave the aspargrass crisp, not soggy, it is really good.

I forgot about the hickory. We have loads of hickory. I like to smoke my sausage with a mix of white oak and hickory.

Do you reckon the food network would be ready for the show we'd put on. If it was filmed around here it'd probably have to be on PPV.

Ahh, speaking of asparagus, I just cleaned and fertilized my asparagus bed yesterday. It won't be long and those lil buggers will start popping out of the ground. I'll try that with some once I quit eatting them as fast as I pick them.

Trying to get the tater patch ready. It's almost time to plant them,, already.

 You know that show would be something like a Foxworthy hunting show. It would be funny. It is good to know that you plant your own asparagus and taters, not many people do that sort of thing now a days. I like the old ways myself. I still enjoy cutting wood, fishing and hunting. I used to help my grandfather kill and cut up hogs and cattle, cure the meats and stuff. I miss it... My grandfather was my best friend growing up and he and my father were big factors in my love for the outdoors.

  Anyway, your smoke house has inspired me and i'm gonna revisit the old ways of preserving meats and bring that home grown goodness to my family. I think that all this new crap on the market, growth hormones and drugs given to animals are the main reason there is so much cancer or birth defects in the world. Maybe its just the communication is better, but i swear i never heard of so much illness out there before. Thats my two cents for what it is worth........
